Creamy Alfredo Lasagna Soup Mushrooms

Ingredients

For the Soup:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3–4 cloves garlic, minced
  • 1 pound ground chicken or Italian sausage
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 6 cups chicken broth
  • 2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 (8 oz) block cream cheese, softened and cubed
  • 8 lasagna noodles, broken into bite-sized pieces
  • 2 cups baby spinach or kale (optional)
  • 1 cup shredded mozzarella cheese

For Garnish:

  • Fresh basil or parsley, chopped
  • Additional Parmesan cheese
  • Crusty bread for serving (optional)

Instructions 💯

  1. Sauté the Aromatics:
    • Heat olive oil in a large pot over medium heat. Add the onion and sauté until soft, about 3–4 minutes. Stir in the garlic and cook for another minute until fragrant.
  2. Cook the Meat:
    • Add ground chicken or sausage, breaking it up with a spoon. Cook until browned and cooked through. Season with Italian seasoning, red pepper flakes, salt, and pepper.
  3. Make the Broth:
    • Pour in the chicken broth and bring it to a simmer. Add the heavy cream, Parmesan cheese, and cream cheese. Stir until the cream cheese is melted and the broth is smooth.
  4. Cook the Noodles:
    • Add the broken lasagna noodles to the pot and simmer, stirring occasionally, until the noodles are tender, about 10–12 minutes.
  5. Add Spinach (Optional):
    • If using spinach or kale, stir it into the soup and let it wilt.
  6. Finish with Cheese:
    • Remove the soup from heat and stir in the shredded mozzarella cheese until melted and creamy.
  7. Serve:
    • Ladle the soup into bowls and garnish with fresh basil or parsley and extra Parmesan cheese. Serve with crusty bread if desired.

Tips

  • For a heartier version, add mushrooms or diced zucchini when sautéing the onions.
  • Adjust the consistency by adding more broth for a thinner soup or extra cheese for a thicker, creamier texture.
  • Store leftovers in the refrigerator for up to 3 days; reheat gently, as the noodles will absorb some broth over time.
